Chimichurri
A flavorful, tangy and spicy herb-and-garlic sauce that enhances meat and many other dishes.
- 1/2 cup chopped parsley
- 1/4 cup olive oil
- 2 Tbsp red wine vinegar
- 1 Tbsp oregano (fresh or dried)
- 2 cloves garlic
- 1/2 tsp coarse salt
- 1/4 tsp red pepper flakes (less or more to taste)
Combine everything in a food processor and pulse. Scrape down the sides, and pulse again until everything is minced and blended.
Cover, refrigerate and let sit for several hours so the flavors blend.
